Bringing It All Together
A good knife makes cooking feel easier. When preparing hoki, shark, bluefin gurnard, blue cod and terakihi to be served with chips, the cut itself seems to flow with the meal. Even chopping fruit feels right when the blade moves cleanly, as if it knows the way before you do.
To keep your knives sharp, wash them by hand with warm soapy water. Dry them quickly so water doesn’t sit and cause rust. For wooden handles, treat them with a bit of oil, like Camellia oil, to keep them looking good and lasting longer.
