Damascus Cai Dao Knife

We are still tinkering with this knife. This test knife we made with a thin spine and a Damascus finish and paired that off with a western (Australian) handle. Shape wise we are pretty close to what we want however we are still pontificating about the steel we want to use for our first batch. 

One thing we know is (having played with it in both of our kitchens) it is a very versatile knife that cuts just about anything - as long as you like chopping.
