The first purchased knife in Sydney was the Gyuto knife

The customer we spoke with said they had a collection of Gyuto knives and it was their favourite knife in the collection. It is, in his words, the "Light weight, All purpose Japanese knife" that was perfect because you could use it for everything.

Typically Japanese Knives, including the Gyuto, have a much thinner spine and a lighter handle meaning whilst side on it appears to look similar to a western chefs knife when it is picked up we notice that it carries substantially less weight.

In honour of the stunning harbour and beaches from Bondi to Manly our guest chose to add the Ocean blue Banksia handle to their gyuto knife so when gazing it had the same colour as gazing out the window from their beachside apartments.
